I need to find a good pinot noir wine for a present.?

What cheese goes with with an australian pinot noir wine?/?

I have bought a bottle of Little Penguin Pinot Noir, which is an Australian Red Wine…what cheese would pair well? My homemade pinot noir wine turned out very sparkling. Is there any way to fix this and make it taste dryer?
